The butterfly grip for bunker shots allows the club to work correctly through the sand. It’s a strange sounding name, but is a commonly used term.
The butterfly grip (for a right handed golfer) means turning your left hand further clockwise on the grip and your right hand further anticlockwise.
This grip gives you the ability to swing the club through impact without the clubface closing.
