Needed to see the Pelicans start to beat some of the better teams in the NBA right doing a great job of beating teams they should maybe not the best on the big stages against the good ones well last night checks all those boxes National TV team that was first in the

Western Conference like I said a red hot team winners of 25 of their last 30 and the bells dominate Trey Murphy comes out on fire um credit to the Clippers in the third quarter kind of beginning of the fourth end of the third they started to make it interesting they claw back

They’re down four they’re down six they’re down five but every time it felt like the Clippers were going to make a run the pels shut the door and what I love to go back to my kind of thesis on last night’s game is at least for last night but I think you’re seeing

This more and more is that why the Pelicans won that game is because they’re a team they’re team it’s not pure individual Superstar power they are one of the more complete teams in the NBA and and and again if you look at some of the statistics from last night I

Think they kind of reinforce this right there’s nothing fluky about how that score came about both teams exactly 12 for 32 from three okay so both out the exact same amount May the exact same from uh Beyond The Arc uh the Clippers shot significantly more free throws and

The Pelicans didn’t even shoot well from the line at all they didn’t shoot any and they only made 60% of them uh you had a you had an equal amount of rebounds I think turnovers like 19 to 15 in the Pelicans favor but no great disparity

There the one thing that does kind of jump out to me is that there was a bit of a gap when it came to assists the Pelicans had 30 to the Clippers 23 and I think that’s where some of that feeling starts to come in that this was the better team and how

Exciting they are and then you look at how spread out the production is right 21 for Zion 15 for bi 13 for herb 25 for McCullum 13 for Trey Murphy 10 for Dyson Daniels and you know yonas can give you that night when he has to Alvarado had some big plays there

Larry Nance can give you some of those nights when he has to we’ve seen Hawkins do it multiple times this year he didn’t have to last night so the Pelicans have a have have such a uh plethora of op right now that you have to consider you

Have to stop and and and again though it’s not just the raw numbers but like like we always talk about uh actually it’s a bit how we talk about Garrett nire in the bowl game right where the raw numbers are great but situationally it’s what I love situationally last night to reinforce

This team aspect every time the Clippers started to get frisky in that second half it was a different person making the play C.J McCullum had a couple big threes Jos Alvarado had a big turnover had a big three Zion had a couple massive three-point plays and next thing

You know the Clippers have accepted their fate and speaking of Zion I’m loving watching the evolution of his game point Zion is real and it’s seemingly getting better night toight like I’m thinking like is he actually a guard or or or whatever I guess we don’t have to put

These old labels on him right in the age of position basketball Zion continues to evolve into being even more position he’s just a mismatch for anything and again we talked about the other day but the gravity that he creates when he’s just holding onto the ball like even like yes when he drives

According to Scouts I I I do appreciate success against your peers and you tell me he’s a 6A MVP of Oklahoma like that’s impressive uh no matter how you It 33 touchdown passes 3,000 yards his senior season well the guy can play so uh we’ll see there so

He’s from Oklahoma one of the few kind of out ofate names in this class and look um when when Brian killer asked about this yesterday he continued to highlight the themes that he has been highlighting for uh last couple of years now which is which are um wanting to build the team through

High school first right um and yesterday he used the word that we use a lot in the show which is sustainability and he was talking about if you’re talking about create and and let’s be clear like Brian Kelly’s main goal is to win a Natty yes

But with you also agree that some of Scott Woodward’s huge initial attraction to Brian Kelly is wanting LSU to be one of those consistent top five feeling teams right a team that is uh maybe going to consistently win 10 games consistently be in the kind of benefit

Of the Dow club and look two years 10 games each season right off off to a a pretty good start and and on recruiting and high school and everything everything’s moving in the right direction like if you want to achieve uh sustainability and you want to find some of that

Consistency that for whatever reason has eluded LSU a bit Through The Years even with some very good coaches and very good results in three national championships um the keys to doing that are Player Development and retention and that starts at the high school level and

If you just look at the year one to year two growth of the high school recruiting class and specifically when it comes to building through Louisiana the early returns are very positive right uh year one and which you had just a few months to to get a class together

Um you got four of the top 10 players in the state which is you know again understandable you took over a really tough spot year two remember this is the first full recruiting cycle that Brian Kelly has had at LSU you get 10 of the top 11 players in the state including a

Clean sweep of the top four that is an unquestioned unquestionable success right there and it answers a couple of key questions first off can Brian Kelly recruit right that’s what a lot of so I it’s been interesting doing some of the um more nationally facing things that I do

Whether it’s on like snaps or like yesterday I’m on uh Red Corner blue Corner which is a big 10 show with Josh Perry and and and and it’s TV and so they really give you everything ahead of time right like they’re giving you all the questions and everything it’s kind

Of scripted out and one of the questions was like does Brian Kelly just suddenly care about recruiting now or or has he just like hired well basically saying that he’s always been a crap recruiter and I was kind of like well I I mean to me you

Know he said this it’s like when you’re at Notre Dame you have academic standards you got to get in helicopter to go recruit here you just kind of go drive down the road and it’s easy to get guys into school and and yes he has an incredible

Staff when you look at Frank Wilson The Godfather of Louisiana and everybody Underneath Him and CH Wilson and just the whole crew so to me it’s like well I I mean I can just go by what I’ve seen and in one full class you dominated Louisiana and

You put together a consensus top 10 class and then some places like on three have you the third ranked class in the entire country um it’s all very positive and so what were the questions entering canny recruit General but also specifically how would he recruit Louisiana would he

Fit in culturally you know family all that type stuff all those headlines looking pretty dumb when you hold over the light of this class when you shine the light of this class on those headlines they start to disappear fall apart because again in the First full cycle that they had in

The state they get 10 of the top 11 and then look at the portal four of the six players you’re bringing in from Louisiana you’re also bringing in proven Commodities as he pointed out in the Press yesterday AJ Swan CJ Daniels Daven Thomas you’re offensive players they’ve

Combined for over 4,200 yards of total offense and Jordan Gilbert from A&M you get a safety position of need guy from uh High 25 games worth of experience the theme is clear they’ve learned the lessons from past history which you have to do right let’s look

Into the past and try to use it as an indicator of future events and they see that every National Championship team has been built on a foundation of Louisiana players and and really even coach and guys that understand how to recruit the state and that’s the

Direction the staff is going as well and maybe that’s where he was a bit off at first thinking that you kind of get the staff from wherever but but you know we’re going to just need a couple Louisiana guys kind of lead the way we’ll get the staff from wherever and

Then um we can still go win Louisiana well now the staff has Louisiana flare throughout right I mean Bo Davis is LSU finally returning home uh Blake Baker played at two-lane wife from the NorthShore coached at lot like coached in Louisiana multiple stuff Joe so so yes um it’s it’s it’s it’s really

Interesting to see such a fullon investment and commitment to the state from somebody that had no ties to the state before he ever got the job and it’s already paying dividends now defensive tackle does remain um an issue and they talked about it and he says look we really like the

Young guys but it’s impossible you know like it’s impossible to you can’t create experience so having someone who’s actually done it is invaluable so yeah they’re going to dive back into the portal post spring try to find some guys there they’re also going to move some guys over from o line he

Didn’t mention who but he did say yes and try them out there which I should be clear I don’t have great hopes for um a guy can move from dline to o line and be incredible because generally you have to be more athletic on the defensive line

So like maybe like an a solid D tackle can be like a great offensive tackle if he can handle the mental side of it and everything else and the footwork and the technique change um I don’t know that I’ve ever seen somebody go o line to

Everybody’s doing this you have no power anyway let’s take it to C and they tried to get a restraining order um against the NCAA in terms of imposing these nil rules right so Tennessee was seeking a restraining order that would have put a pause to the rules that the NCAA is

Trying to come after Tennessee with the federal judge yesterday actually ruled in the ncaa’s favor did not Grant the restraining order however do not get fooled uh I’m sure that maybe some NCAA uh sources will try to paint that as a win for the organization um but all it really is uh

Is is it just saying that for now uh the the the the the federal courts are just basically say no we’re not going to do the restraining order thing but we are going to have a further hearing on this the injunction is going to be in Greenville on February 13th and this

Could be massively bad for the NCAA and the reason being while ruling that or while not granting Tennessee the restraining order here’s what the judge would go on to write about Tennessee’s the plaintiff’s uh claims here right that the NCAA is screwing them over basically he says quote considering the

Evidence currently before the court plaintiffs Tennessee are likely to succeed on the merits of their claim under the Sherman Act which is of course is the Antitrust Act I’m going on to say quote ncaa’s nil recruiting ban so saying that you can’t use nil recruiting likely harms competition and is

Therefore anticompetitive and he would go on to say the rules in question quote likely Foster economic exploitation of student athletes so this goes back to the theme that we have told you on OTB now for multiple years ever since Justice Kavanaugh sent that letter to the NCAA this has been the impending

Doom that was going to arrive here eventually and it is the it is just the the the base um fundamental aspect that the law is not on the NCAA side that the ncaa’s makeup um would be flatly leg Al in any other uh section of American industry or business and that it’s weird

Some of the friction that you maybe feel with watching college sports change around you in the manner that they have is frictions that is created because we had all adopted and accepted a A system that should have been illegal for nearly 100 years and finally it just got big

Enough to now it’s all coming to a head so again I I don’t know if it the best way of explaining that basically you may see a headline that said that the NCAA won yesterday uh you could look at it like a lot of people are doing sports

Analogies right you could look at it like a first quarter lead it really means nothing the bigger news here is that the judge basically told the NCAA you’re going to get screwed if they when it comes to trying to win these cases because of the antitrust laws you can’t

Manipulate a system like this you can’t cap earnings in the way that you seek to and we told you for years now that you’ve had lawyers waiting in the wings for the NCAA to try to pull this they have lawsuits already written citing antitrust laws and and this is the

Beginning so I I’m I’m still surprised that the NCAA has chosen to go down gone go down this route because it feels as if they’re kind of hastening their own demise but February 13th going to be a big day uh for the NCAA as that might be

Potentially when like the same way that they lost the ruling recently that uh they couldn’t cap like players eligibility when it came to transfer in schools um it could be officially legally codified that uh you can do pay for playay and you can do nil and recruiting and all

That the only way that could ever stop I would believe would if you did eventually unionize and have an agreement where the the labor themselves would be saying yes you know we agree to these terms and conditions in these rule sets um so this this kind of feels to me

Again like the uh beginning of the end or not really the beginning uh the latest step in the death march that the CAA has been on for a while now just don’t know why they did they could have just sat back man could have just sat back not gone after Tennessee

Called you Michael Jackson during the break um and then of course there’s Taylor which you don’t even worry about because Taylor sucks nobody likes Taylor um Chef okay I have a little bit of a question so I was very pleased the other day uh my grandma has an old chicken free Cay

Recipe that is awfully written right a lot of gaps in it a lot of unaccounted for steps but I managed to reverse engineer it and for about the first time probably damn near 20 years I felt like I tasted like my Grandma’s Chicken freak I say it was awesome I was very pleased

With the results but one thing I still wasn’t entirely confident on was how to handle the chicken in the free so how it worked was like um basically I made a rue right uh and then I I I think used like a quart of vegetable broth and veggies like made AO

Uh did did the did the onions bell peppers the veggies in there uh soften those up uh a quart of vegetable broth in there and then I um and just cuz I had vegetable broth on hand and then I took the chicken I blackened it a little

Bit like in a cast iron and then I dropped it in there right right and I had it boiling for a while and then I lowered it but but I don’t have a great and for a second I thought oh my God I just like overboil the chicken it’s

Going to be tough it’s going to be nasty but no it came out great it came out soft but I don’t I I guess I’m just concerned about like if I’m dropping Chicken in and I’m reducing that that broth all the way down to get that kind

Of thicker more gravy like texture that I’m looking for um how do I correctly cook the chicken how do I know when it’s done how do I know that I’m not going to uh give myself like salmonella or something yeah I mean if it’s if it’s simmering brother it’s not going to take

Very long you know I think you’re more so trying to get it to a point to where it’s tender and falling apart than you are concerning that it’s that it’s going to cook through I mean a hot liquid if it’s steaming you know it’s not going to

Take terribly long okay and just just to throw an an alternative in there um so are you familiar with picata no what’s picata chicken picata it’s similar but different it’s an Italian Dish um but you know with with Fric aay like you could take your chicken instead of

Making the Rue to ahead of time some folks will take their chicken and and and roll it in flour and brown it that way okay you know like on on each side yeah and then put the broth in on top of that and the flour from the chicken will

Thick in the the stew if you will oh interesting so it creates Theo kind of in and of itself yeah naturally yeah yeah yeah yeah um I’ll definitely try that out yeah yeah uhhuh so well sorry and I know I’m going to get to you questions a second but I need to know

This uh so like if if I’m just simmering that to to reduce or whatever I don’t have to be worried about overcooking the chicken like I was worried that it was going to come out rubbery uh well I mean that’s it’s kind of a tough deal

It’s kind of you know like you could pull the chicken out and temp it but you’re not really looking for the temperature of it at that point you know like you’re looking for the you’re looking for the texture of the chicken right yeah and and it’s that’s meant to

Things out that they know belong there because you know there’s people that want to steal your recipe and they don’t have the common sense to you know what I mean like put salt in there or you know I mean it was I mean honestly I found it

To be kind of free right where a lot of these online recipes are so to a te that it feels almost like stressful sometimes and so this was a little more free form right where I was like okay dude I can play with this a little bit and let’s

See that was fun that comes from somebody that you know cooks that way you know like you cook from the heart and and there is there there is you know uh flexibility there you know it’s it’s not a black and white World brother it’s a gray world you know with t thousands

Mean like you’re following somebody else’s thought and you’re not using your own enough you know and so I think you know like when I when I encourage people that way it’s it’s a teaching process you know it’s I don’t want to you know like you don’t catch a man of fish you

Teach a man of fish right so um yeah it’s along the same thing same same principle process yeah hashtag Munchies uh what does Chef think is the best Super Bowl food um the the the one that I don’t have to cook well said yeah yeah um I’m you guys

Know this like if you put a dozen different types of wings out in front of me I’d eat all all all 12 varieties you know what I mean I’m a huge Wing fan um and it doesn’t matter if it’s the the the tip the wing tip or or the the drum

At you know like yeah I I I can put put put a put a wing in my mouth and shoot it out the other side and it’s gonna be clean you know like I I like wings yeah I call that the Scooby-Doo um what

About oh no I was going to say uh for me underrated Sports food uh a good shuder plate you know AB kind of dip in and out the entire day you’re drinking with it like cheese little sweet little salty very very good absolutely I’m kind of

Dirty like this too like if I make like a a a a a cheese dip or something you know like I’ll put ground beef and Sal in it but I’m putting some spice in there and some fresh cilantro and I’m going to make it so hot that not

Everybody loves it because I know you know like I know what I can tolerate hell yeah oh oh there’s a lot of dip left here yeah oh man that’s so good uh perp purposefully spiking the cheese dip so you maximize queso intake hell yeah it’s a passive it’s a passive spending

Of of your fruit favorites you know what I mean hashtag Munchies do you s do you SED uh protein with or without butter um it depends on what it is you know i’ I’ve soued crawfish tails with butter and it turned out excellent because you know like crawfish don’t

Have a whole lot of fat in there to kind of keep them keep them that way but you know I also flavored the butter put some orange and and and lemon in there to help kind of brighten the flavor up because butter in essence you know like

That it is a a really that fatty Umami texture and flavor of butter can overwhelm right so um definitely put some stuff in there to help contrast you know acids help um you don’t want to put too much acid in a SV because the length of the process can actually make it

Um it can prematurely cook it to acid will you know lemon juice in particular because it’s so strong to where it it it turns into mush so it’s it’s a a comfortable balance of the butter and and just a squeeze of lemon to kind of balance it out I still never engage with

A sousi one day um I’ll try it out uh # mudgies when boiling potatoes does putting baking soda actually make a difference I don’t put baking soda in and stuff like that yeah I put salt in there just to you know salt the water um some people you know like that’s not

True that you know like broccoli you know you can put a little bit of baking soda in there and it’ll help it keep it green for longer but you know like you need you have there’s a a ratio that looks correct with um you know the amount of water the amount of broccoli

Because baking soda is is an Alkali right so it does the opposite of what an acid does an acid will make will make a green item Brown prematurely baking soda will turn it bright green prematurely and it won’t it it won’t be cooked through all the way so you know you you

You have to be careful of of how much you do that yeah um uh okay going back to the fre say I had a question on the potatoes as well because like I was doing the thing where I wanted to make that for myself and my wife but for my

Kids I was just giving him like a just classic chicken and like roasted potatoes right yeah um but I also wasn’t exactly sure what was the best way to cook the potatoes was it to just throw it in there with the chicken as I’m simmering it reducing it um and I just

Ended up you know again roasting them in the oven uh olive oil salt pepper whatever they’re great and then putting them in after uh should I be dropping those potatoes into the into into the broth so there’s there’s two kinds of potatoes right there’s a waxy potato

That’s like a new potato yeah and and that doesn’t have a whole lot of starch in it and then you have a starchy potato which like an Idaho or a Gold Russet and and the thing is is that if you put a root into your Fric aay and it’s thickening

And then you put potatoes in there as well those that pot you know if you’re putting a starchy potato in there it’s going that that potato is going to release starch and it’s going to thick continue to thicken a little bit more and a little bit more now you can you

Can uh um adjust for that by lightening your Rue and and and you know cooking the potatoes in there so that it thickens to the point also you can like um simmer that simmer all that stuff without R without thickener without without anything to a point to where it

It looks um like the potatoes are cooked through remove some of the potatoes and and puree them and then add them back in and that will it’ll thicken that that that liquid up like um almost like a chowder you know I mean thck you you thick in the milk with with uh potatoes

In a chowder and it’s just enough to add that kind of um consistency that you’re looking for for your palette you know and so um I don’t think that a r is absolutely necessary especially if you’re using the to dip the chicken in and then and then put it in the liquid

Um so I don’t know if I’ve complicated that more for you or not but no I mean that’s that’s kind of the great part about it right I’m just going to keep messing around with it and experimen with stuff uh hashtag munches do you usually use sweet onions or yellow

Onions in your recipes sweet onions yeah there you go I I can’t think of them you know like why why use a a plain old yellow onion you know it has a little bit more bite in C certain circumstances I I will tell you you know like there’s

There’s times like if I’m serving it raw and I’m going to shave it super thin and put it on a sandwich I might use a yellow onion for the bite but I I just like the flavor of sweet onions you know you can do the same thing with them and

It have a little bit more character it’s uh you know kind of like an all meat hot dog versus a versus a Nathan’s or or you know Hebrew national uh you know like it the flavor is better it just has more character to it uh and then finally because it’s about

In it’s a bit of a hornet M so I I I go 11 minutes I I will bring it up to a boil bring it up to a boil cut it off as soon as you see it bubbl bubbling cut it cut it off and and I I don’t put ice or

Anything in it you know what I mean I I you know I I have put water in it you know like my brother has this system that it it like sprays liquid on the pot but I just cut the cut the heat so that it’s not moving is abruptly really what

You’re doing with crawfish is not boiling them right you’re you’re poaching them or or even simmering them to some degree right boiling is a is a temperature that you’re you bring your water to it’s it’s you know a full rolling boil has steam screaming off of it and action you know bubbles coming

Heavy and and a poach or a simmer has you know a simmer has Le less action less steam less bubble and a poach is still liquid that’s steaming you know it’s like 185 degrees somewhere in there so in a in the kitchen world all those terminologies have different uh

Temperatures as well to identify where you needed to go and realistically you know like we’re poaching and that’s what I do that you know like I do an 11 minute poach on a crawfish and let them soak and um it it turns out perfect for me there
