Here’s how to make easy chicken empanadas. Enjoy a tasty Mexican dish and easy recipe you can make at home anytime.
The recipe:
For Dough:
• 1 lb All-Purpose Flour
• 3/4 lb unsalted butter
• 1 1/2 Tbsp Baking Powder
• 3/4 cup water
• 2 tsp salt
• 1 tsp granulated sugar
1. Boil the water, salt, and sugar. Set aside.
2. Mix flour, butter and baking powder with a fork until the dough forms pieces the size of peas. Add water slowly, mixing until it becomes a dough.
3. Roll into golf-ball sized balls. Set aside in refrigerator until ready for use.
For Filling:
• 1 lb of chicken breast
• 1 yellow onion
• 1 bell pepper (any color)
• 1 bag of frozen mixed vegetables, cooked
• 1 chicken bouillon cube
• spices (to taste): cumin, red pepper flakes, lemon pepper seasoning, salt, pepper, new mexico chili powder
1. Cook the chicken breast by boiling it until done.
2. Shred the chicken breast.
3. Chop the onion and bell pepper into small cubes.
4. In a large frying pan or skillet, cook the onions and peppers,
5. Add the shredded chicken and vegetables.
6. Add the bouillon cube. Add spices to taste.
7. Mix the filling, cooking until spices are well incorporated.
Assemble and Cook:
1. Roll out each dough ball in between two pieces of saran wrap to thin rounds (at most 1/4 in thick), add about 1/4 cup off filling in the center. Fold the round in half, sealing the edges.
2. Place on a baking sheet lined with parchment paper or a silicone mat.
3. Cook in oven at 375F until golden brown (about 10-12 minutes)
