The set of clubs that I have are the Taylormade Qi's that are known to have high launch.

Typically my ball launches so high and either plugs or barely roll out which makes it great for my approach shots but on windy days i would like to have a more piercing shot that will land and roll out some.

Stiffer shaft, or low-launching shaft? Also learning knock down shots

It’s a lot harder for me to hit low shots swinging full. Moving the ball back in your stance will lower trajectory. I’d suggest trying to do 1/2-3/4 shots where you try to get the ball flight really low, like you’re just punching out from under a tree, to get the feel for that, then you can progress that.

If you have access to a sim you’ll want to try to get your aoa into the negative 5-6 range, make sure you’re not hitting up on the ball.

Work on shaft lean at impact. 7 iron should launch around 21°. My guess is your hands are too active and flipping the club under the ball. Try to figure out how to cover the ball. Descent angle closer to 48° is optimal for that club, apex between 90-100 with that ball speed. Note: range balls are meant to fly shorter and will sometimes have steeper descent angles than the ball you play on the course.

If technique doesn’t bring it down enough, you need a fitting, primarily for shaft. The Qi heads are pretty strong lofts so that leaves shaft kick as my first guess.
