Alita chef. [Music] Welcome to Chefs. I’m Scott, your host. And today we’ve got a special guest for our chef and Lisa Renee. And Lisa is track royalty from UCLA. She’s a long time friend of my uh director Joy and I am really excited to have you here today because you are just an all over person. Track royalty. How did you get track royalty at UCLA? Came and got me for the hurdles, the long jump and then I ran all the relays. Wow. Yeah. So it was So she’s fast. You’re fast. And your director Joy was on. She’s my teammate. Oh, awesome. So Yeah. Yeah. But more importantly, she’s our first mom of a college athlete today. And and his his name is Cam. We were going to see him later today or later as a taster. But I’m really excited. So he’s got to be terrible. You’ve got to be changing clothes constantly. You know, time. In fact, [Music] where where has Cam been? So, well, I have to tell you this much. It’s been a trip because he started off at University of Washington Huskys. Wow. So obviously he went to Washington. Yes. Yes. Very. He was number 22. Davis to Cam Davis. Wow. And what did he do there at Washington? Running running back. He’s gone to Washington. I know they did great. They had some great years there. Yes, he did. What do he do next? Minnesota Gophers. Wow. Minnesota Golden Gophers. So, he’s there as a running back. I’m glad he’s there. Wow. He’s so happy. He loves it. So, besides being a fantastic athlete, having a great uh career in in at UCLA, you’re an amazing mom, amazing grandma, and I hear you’re a great cook. Wow. And an amazing cook. And so, we’re doing a special dish today. It’s a keto Cuban chicken with cilantro and cauliflower rice. Yes. Wow, that’s a mouthful. Yes. So, tell me about this dish. Well, it’s healthy and obviously the Cuban flavor is going to make the dish beautiful. Lots of colors. Wow. Lots of exotic flavors. So, it’s it’s just so delicious. Awesome. All right. And what’s cauliflower rice? is cauliflowered that looks like rice. It’s just simple and it’s super healthy because it helps you with the digestion. Um, all the nutrients are in the cauliflower and in the ingredients that we have out here that we put with the chicken and with the cauliflower. Wow. I’m excited. This sounds good. So, let’s get started with the ingredients. So, this is Cuban chicken, right? Oh, yeah. Do you know how to do Yeah. All right. Oh, let’s get back to the ingredients. I’m sorry. I got I distracted. So, I know this is So, what do we What are ingredients we have here? Well, this is for the marinade. And we marinate it overnight so we can have all the Cuban flavors. Oh, there we go. I like it. You have olive oil, garlic, cumin, cayenne pepper, lime juice. You got to squeeze it, right? Yeah, that’s right. Onions. And now when that’s done, well, okay. So, it still goes in the marinade and it’s going to also be cooked with the chicken as well. So, you have the bell peppers, nice color. I like it. Coconut oil and cilantro. Perfect. This looks great. Mhm. So, we’ve marinated this all night and this looks absolutely fabulous. And so, now we’re going to cook this over on the stove top, right? Okay. Awesome. Our athlete of the week is Cam Davis, University of Minnesota. Tim Davis into the end zone for gold. [Music] Wow, this looks great. This been cooking about 15 20 minutes. Uh, wow. This is So, so what do we do next? Okay. So, I have to fix the seasoning set that goes on top of it. Okay. But I need this cut first so it’s nice and warm. Do you mind cutting it? Absolutely. Go ahead. Cut that for me. And then I will fix the little things that go with on top of it. Perfect. So, let’s go ahead and put the chicken in here. Okay. And you know, I talk like a mama chef. Mama. The little stuff. There we go. The little stuff on top of it. All right. So, I’m going to take this over and and make these into bite-sized pieces. And I’ll let you make this [Music] So, I’ve got this all cut into nice little slices. How do you like the smell? Oh, that smells wonderful. It really smells good. Okay. Well, we can go ahead and pour that over. All right. Perfect. Let’s go ahead and You ready? I am ready. Awesome. Looks great. Get it all out. All right. On top. So So we’ll go ahead and start the broccoli rice. Sounds good. All right. So now that we finished the chicken, which looks absolutely amazing, we’re going to go ahead and start with the cauliflower rice. Right. Wait, let me tell you something. We don’t have to tell people it’s cauliflower rice. They could think it’s regular rice. Oh, really? That’s why we do all the seasoning. That’s why we do all the pretty things. Really? Cuz cauliflower has no taste. Like zero. Okay. Okay. So, let’s start it. All right. Okay. Let’s And I use butter. Okay. Because I’m cooking for my son and he likes butter in his rice. Right. So, he likes butter in his rice. So, I can fool him with the butter in the cauliflower. He’ll never He’ll never know. I’m sure he’ll never know. Yeah. Got it. Know that we’re eating mom’s healthy keto dinner. This is good. Um, can you hand me the cloves? I have the uh This is the garlic cloves or garlic, whatever you want to call it, pieces. Remember, I’m a mama, not necessarily your chef. You can correct me. You can correct me on the proper chef terms. Okay. Okay. The heat feels kind of high. I’ll turn that down a little bit to low. Even though it’s low. Yeah. But for the butter. And now little bit of lime. A little bit of lime. Thank you. Oh, you’re welcome. You’re the lime. I am a lime king. Okay. The lion lime king. Close. And now for the main event. Wow. So, where did you get this? Where can you get cauliflower rice? Everywhere. Everywhere. Uhhuh. You can buy You could take a cauliflower and cut it up. You can get frozen or you can get prepackaged cauliflower. And sometimes it does come with, you know, some seasonings with it. Okay. But I like it this way. I don’t like to cut up. I don’t have time. Ah, to cut up. Take a whole head of cauliflower and cut it up. So, I cheat. It’s cut up for me. Well, that looks good. Does look like rice. It does, doesn’t it? How does it smell? Smells good. If I would have had you just taste the cauliflower. No taste. Well, what does it look like? What do you think? So, it’s I think it’s about ready. So, we go ahead and plate this over at the on our tank. So, let’s go ahead and take it back. Okay. First off, you said you had some Cuban dancing you can do. It’s salsa. Salsa. Yes. Ready? Step. Two. One, two, three. Step. Come on. Two. One, two, three. Step. One, two, three. One, two, three. Now you move your hips. Oh, yeah. I can. One, two, three. All right, that’s it. One, two, three. That’s enough embarrassing Scott. So, we have some incredible tasters here today, and I’m really excited. One of them we have right here in studio. It’s Chris, who’s in the UCLA track family. High um um all-star high jumper. And she’s going to stand in and she’s going to have to taste and I’m going to take it over to her. And who are we taking? Cam. Number 23, Minnesota Golden Golfers.
