Alita chef. Welcome to Chefs. I’m Scott, your host. And today we’re with Dr. Katerina, who’s going to be our guest chef today. And Katarina is from Greece, I hear. And how long you’ve been in the US? 20 years. 20 years. Yeah. And you came over as a nurse originally? Yes. And then now you’re big- time doctor in Tmacula. TMC and we’re making a very special meal and we specifically came and got you because I you told me you made this hundreds of thousands of times. It feels like it. Yeah. So, what are we making today? Yes, we’re making a musaka. Musaka is a very traditional dish in Greece with eggplant, potato. We use a ground meat and we make the bameal sauce. So, I think everybody will love it. Awesome. I’m excited. So, first off, we need you to get you ready to cook. Wow. That that’s an entrance. So, so the first thing we have to do is is these are the ingredients for So, this is the the meat sauce. Okay. And so, what’s in this? Yeah. So, for today, we’re going to use ground beef. It’s it’s up to you. Like back home, people use pork. They they mix the beef with the pork, lamb meat. So you can go whatever meat you basically you like. It’s uh just completely change when you uh put all these ingredients together. Got it? Okay. So this are ground meat. I have some chopped onion already. Um I have some uh uh beautiful garlic here just you know chopped by hand. Um, I have some uh spices here. So, this is my uh my cinnamon. I have some nutmeg. I do have here some oregano. And these are my bay leaves. Um, I want to leave the wine. Maybe we can drink it. We can use it for the sauce. We are in Greece. Do as Greece. Yes. So, I do have some tomato sauce here and some uh tomato paste. So this basically I like to uh use my um uh basically my wine at the end. Got it. Yeah. All right. So let’s get started on this the stove top. Let’s get to work. So we have the on medium heat. And so what do we do first? I would like to go with some olive oil. So, we’re going to go ahead and start on the sauce. But before we do that, I love that Greek music in the background. And And where do you is that a application on the phone? The the Apple Music has also Greek music. So, awesome. I’m I’m going to get I It’s great. Great. I like to hear it in the background. It’s very cool. All right. So, what’s in our ingredients? So, we we’re going to make the besamel sauce, okay, which goes basically on top of the dish. Uh, so this is our butter. I have flour. I have milk. I have nutmeg. I have my eggs here. I have some uh cheese. You can use like pecorino type of cheese. And I have some uh crumbled basically some crumbled bread here. Um, and I do have salt and pepper. And we’re ready to go. Awesome. Well, I think we have to go do this on the stove up. Absolutely. Yes. All right, let’s do that. Yes. Thank you. Our athlete of the week is Cam Davis, Minnesota Gophers. So, we’re going to go ahead and start the sauce then. Yes. We need the, you know, the butter here. You can actually do that. This is completely done. It does not need any more basically. All right. So, let’s set it aside and let’s go ahead and uh make a make our dish. Yes. This is perfect. Awesome. Okay. So now we are ready to make this dish. And what are we what is this? So we already started earlier baking our eggplant. So we baked eggplant with spices. We use salt and pepper, paprika, olive oil. Uh you can air fry them or bake them or put them in the basically the fry pan. Okay. And then we have potatoes. Uh the same thing, you know, basically we cut them in layers and we bake approximately 15 to 20 minutes at 350. Awesome. Yes. So that’s going to be your layers and then we have the meat sauce. Yes. All right. Let’s get started. So what do we start with here? So I’m going to start with some olive oil, you know, in my pan. Okay. Just to make an anti stick surface. Okay. And then I will uh start with the potatoes first. Okay. So I will put them you know as a base layer my potatoes. Okay. Well, this looks really good. So, I’m So, we’re going to put this in the oven. I’ll go ahead and do that for you. Please do. Wow, that is Oh gosh, that’s heavy. Ah, it’s heavy. Okay. All right. So, we’re going to put on 350 for about 35 to 40 minutes. And yes. Awesome. So, how’s this look? This looks absolutely lovely. Oh my gosh. Looks just beautiful. It looks So, I will grab that out since it’s like heavy. It’s This is what I was telling you. This is how I get a lot of exercise in the kitchen. Wow. Look at Look at that. That is amazing. So, this looks absolutely lovely. I’m impressed. So, we’re going to take some quick I’m going to make a nice cut there. It’s nice and warm. It’s like you’re really generous on your pieces. Yeah. Yeah. Yeah. You know, it’s like I’m hungry. Yeah. I’m hungry. This has been a long day. We’ve been cooking for a long time. Well, this looks absolutely amazing. We’re going to take this and get it. Look, I want to make sure I get You see how the sauce is Look at that. Perfect. You can see that. That’s absolutely lovely. I mean, awesome. Yeah, this is exactly how I want it to look. This is great. Mhm. I know it. Look at that. So, I’ve got two plings here and I’m going to set these actually up. And uh before we dig into it, we have some special uh taste testers day. Very special. Some little ones and big ones. So I’m going to go ahead and take it over to them. Yes. So here’s our special tasters and little tasters and we’ll be making masaka. And I’ve got you here. And you want to give that to your mom? This is a pretty piece of sourdough. There you go. Perfect. Try that out. This is This is amazing. I The piece of sourdough is in and the masaka is awesome. Peekaboo. Wow. This is well made. Peekaboo. She’s just going to stay with the bread or you can actually go with the masaka, too. This was made from scratch. Yeah, absolutely. And check this out. She’s She put little crosses on it. Oh, wow. That’s amazing. That’s amazing. Yeah. Isn’t that great? Is that good? Did you like that? See that? Wow. Enjoying the bread, too. Wow. I see the soft part right there. Mhm. You like it? That’s amazing. So, the second dish. Yeah. Go ahead and try it. Remind me. What is it called? Musaka. Musaka. Yes. It’s eggplant potato. Eggplant potato. Vamel. Yes. She likes the bread. You love the bread, do you? Wow. Is it actually good? It puts the regular mas um lasagna to shame. This is awesome. Isn’t it great? It’s a lot. No, this is this is this is really nice. Perfect. Wow. So, the tasters are out gobbling that up. But one thing I did not bring up, this is an amazing piece of bread that you made this morning. Yeah. Wow. This is a sour dough bread. Look at this. They even have these cool little Greek patterns. How did you do that? Yeah, I always make a cross. I like I like to, you know, this is very traditional to make a cross. Wow, that’s amazing. So, we’re we’re going to do a little Oh my god, this is This is amazing. He’s going for a Oh, I’m I’m going after this thing. Look at this. This is Look at how soft that is. Yeah. This is Is it amazing? Yeah. That’s awesome. So, and I mean, it’s nice. Great sourdough dough. And I’m going to cut one more piece here for me. I’m going to make it bigger than yours. There’s a competition. It’s a No, no, no. Of course not. Who’s going to eat? Yeah. more mine. So, why don’t you go ahead and taste that? That’s is this looks absolutely lovely. Thank you so much.
